Lemon crackers


~ 25 crackers

Preparation Time:

1 hour

This is what I need:

– 100 g of soft butter
– 1 egg
– 120 g of sugar
– 15ml lemon juice
– 1/2 teaspoon baking powder
– 300 g of flour
– sugar and icing sugar

Let’s get started!

1- Using a whisk, mix the butter and the egg

2- Add lemon juice and lemon zest

3- Add the sugar and whisk vigorously

4- To add the flour and yeast mixture. Mix until a homogeneous paste is obtained.
5- Place the dough in a bowl, cover it with cling film and leave to rest for 30 minutes in the refrigerator

6- Preheat the oven to 180°C and place parchment paper on a baking sheet.
7- Place sugar in a first bowl and icing sugar in a second

8- Form balls of dough of the same size then roll them successively in the bowl of sugar then in that of icing sugar

9- Place them on the baking sheet, spacing them generously and leave to rest for an additional 15 minutes in the refrigerator

10- Bake the crackers for about 15 minutes, they should be cracked but not go brown

The little trick

Dose yourself the lemon juice according to your tastes. You can even use lime juice!
