Salted butter caramel Crème Brûlée

This is what I need:

– 70g Mamie Bio salted butter caramel
– 4 egg yolks
– 40cl liquid cream
– 100g sugar
– 4 tablespoons brown sugar

Let’s get started!

1 – Preheat the oven to 95°C

2 – Dissolve the salted butter caramel and cream in a saucepan while heating without boiling.

3 – In a salad bowl, whisk the egg yolks and sugar to make them blanch.

4 – Pour the lukewarm preparation over the egg sugar mixture and mix with a whisk

5 – Strain the mixture to remove the foam and allow it to cool.

6 – Pour into 4 ramekins.

7 – Cook in a hot water bath for 1 hour

8 – Once cooled, sprinkle with brown sugar and caramelize with a blowtorch.


The little trick

Adjust the amount of Salted Butter Caramel to your taste! You can also add fleur de sel to your preparation (step 5).
